One-pot jollof-style
chicken rice.
This is a pantry-first weeknight route, not a claim to be the canonical version of jollof.
Brown the chicken, build a concentrated tomato base, add rice and stock, then finish everything together on low heat. It is built for the common chicken + rice + tomato pantry combination while keeping the flavour direction recognisably jollof-inspired.

actual dinner.
What do I need for one-pot jollof-style chicken rice?
You need chicken, rice, a tomato base, onion, cooking liquid and enough seasoning to make the pot taste deliberate.
Ingredients
Method
Brown the chicken.
Season and brown in batches so the pan is not overloaded.
Build the tomato base.
Soften onion, then cook tomato paste, tomatoes and seasonings until concentrated.
Add rice + liquid.
Stir in rice, add stock or water and return the chicken.
Cook covered.
Use low heat until the rice is tender and chicken is fully cooked.
Rest.
Leave covered for 5–10 minutes, fluff, taste and adjust seasoning.
What can I change without pretending it is the same recipe?
Change heat level, stock, aromatics and vegetables freely; changing the tomato-rice structure or core seasoning direction moves the dish further away from this jollof-style route.
Reduce chilli.
Heat is adjustable. Build flavour from tomato, onion, browning and stock instead.
Use water.
It still works, but seasoning and the browned chicken need to carry more of the flavour.
Respect timing.
Firm vegetables can go earlier; delicate greens should go near the end.
How do I know the chicken is safely cooked?
Use a food thermometer: USDA FSIS recommends poultry reach a minimum internal temperature of 165°F / 73.9°C.

Cook it once.
Keep your version.
